In the past I've made several mentions that Joan was making a Cobb salad for our dinner and I've received some emails asking what was in it so I thought I would give you the recipe Joan uses.
The
Original Cobb Salad
2
Chicken breasts, cooked and finely diced
1
oz. Iceberg lettuce, washed and chopped
1
oz. Romaine lettuce, washed and chopped
2
tomatoes, washed and chopped
½
avocado, thinly sliced
2
oz. Bacon, cooked and finely chopped
2
hard boiled eggs, finely chopped
2
oz. grated Blue Cheese
Dressing
2 egg yolks
¾ cup olive oil
1 lemon juice
3 tablespoons Worchester sauce
1 tablespoon Dijon mustard
1 clove garlic, minced
½ cup water
Salt and pepper
She also adds the bacon grease to the dressing. It does make a difference in the taste.
