Sauerkraut Salad

Here's another great receipe from Ann...
SAUERKRAUT SIDE DISH ALA LUBLIN
SALATKA Z KISZONEJ KAPUSTY PO LUBELSKU
INGRIDIENTS:
1. ½ MEDIUM YELLOW ONION
2. 1 MEDIUM APPLE (MCINTOSH, JONATHAN OR SIMILIAR)
3. 1 MEDIUM RAW CARROT
4. 1 LB SAUERKRAUT
5. FRESHLY GROUND BLACK PEPPER
6. SALT TO TASTE
7. OLIVE OIL

1. Finely dice 1/2 yellow onion and place in the bowl
2. Sprinkle pinch of salt and mix
3. Peel and coarsely grate raw apple and add to onion (apple should be grated in small thin strips)
4. Peel and coarsely grate raw carrot, add to onion an dapple and mix
5. Squeeze sauerkraut to remove all juice and add to the bowl and mix well
6. Add freshly ground black pepper to taste
7. Add olive oil to taste and mix
8. Let it sit for few minutes
9. Adjust all the ingredients to taste
